Welcome to Thanksgiving week friends! This past weekend we had our first of three Thanksgiving meals. We headed to NY to visit my family and celebrate the holiday a bit early. It was so nice to see my family and enjoy all of my favorite Thanksgiving foods! In preparation for the indulgent meals I’ve been trying to eat lighter and healthier this week.
My morning runs have been so cold! I’ve been loving warming up with a warm cup of tea and a bowl of oatmeal. This week the oatmeal toppings are scarce, we need to restock on some of my favorites. I was able to find some dried cherries and almond hazelnut spread to put on top. It was surprisingly delicious!! I’m loving Trader Joe’s Pumpkin Rooibos tea with some milk.
With the short work week we bought just enough to get through the week. Roast beef, salami and cheese on wheat bread for deli meat. I’ve been loving hummus and tortilla chips, apples, clementines, and rice cakes with peanut butter to snack on throughout the day.
It’s been a nice amount of variety and so good!
After indulging all weekend I was in the mood for something light. On the menu was broiled salmon, sautéed kale and brown rice. It was delicious and the perfect meal.
Also on the menu this week is veggie burgers with sweet potato fries and more kale. Yes, MORE kale. We bought a huge bag of kale at the grocery store and it’s never-ending. We are on week two of kale. Also on the menu, homemade stuffed peppers. Yum!
As hard as it is, desserts are off the table! I’ll be having them at each Thanksgiving and that is more than enough sweets for a week!
