Another What I Ate Wednesday is upon us! Not too much has changed around here in the way of food. We are still loving our favorites, and like always focusing on portion control. As we head into the Thanksgiving week we’ll definitely be planning some lighter meals like salad with grilled chicken, fish and green veggies. I like to focus on healthy, lean meals on holiday weeks so I won’t feel so guilty indulging. Considering we’ll be celebrating Thanksgiving three times this year, we definitely need to get our veggies and lean protein where we can!
I’ve been digging the oatmeal lately, which is odd really because it’s been kind of warm in Boston the last few days. Pineapple was on sale this week and happens to be one of my favorite oatmeal toppings…win! Into the mix went a half of a banana, oats, milk and then on top I added brown sugar, raisins, some Bearnaked Honey Granola and fresh pineapple. On the side I had a cup of DECAF coffee, yep I’m cutting out the caffeine again…or at least getting it in check.
We decided to mix things up a bit on the sandwich front. We opted for roast beef and salami at the deli counter, and some American Cheese. We even got some horseradish mustard to complete the sandwich. So good! On the side I had Cheez-Its, an apple, some pineapple and a chocolate rice cake later in the day for a snack.
Quite a nice change in pace for lunches!
Saturday night was date night in. We had some bruschetta as an appetizer and then made pasta carbonara with salads for dinner. It was so good! And so much fun to follow a fun night of cooking and food with a movie. We generally don’t eat a lot of pasta so I always enjoy it when I do have it.
This is a crazy week for us so Michael made a big batch of our favorite Lemon Chicken Orzo Soup. It’s so nice to come home after a busy day and make a warm bowl of comforting soup. Plus it ensures that we eat something healthy at our busiest!
For our little date night in we decided to have homemade brownie sundaes for dessert! We made brownies with applesauce so they were lower in calories. On top we added coffee frozen yogurt with chocolate chips. It’s still dessert but we do what we can to keep it lower in calories.
