What I Ate Wednesday!

Can you believe another Wednesday is upon us?!  Time seems to be flying by lately.  It’s also so hard to believe that Thanksgiving is only two weeks away!  I’m looking forward to it and excited for all the food that will be coming our way.  We’ll be heading to NY the weekend before to celebrate with my family and then will spend the holiday here in Massachusetts with Michael’s family.  We’ll be hosting a Yoga-Giving on Black Friday with my new yoga family.  I’m so looking forward to it!  For now though, we have some good non-Thanksgiving eats gracing our plates…


This meal has been very random lately, which is so unlike me! On Fridays I’ve been making an egg sandwich with American Cheese and truffle oil on a whole wheat english muffin.  Fridays have less traffic so I have more time in the morning, I love enjoying my coffee and breakfast and watching the today show.  Kale smoothies, and english muffins with peanut butter have also been gracing my plate.  I celebrated Election Day with a stop at Honey Dew.  I had a pumpkin spice coffee and a blueberry muffin…so good and a nice treat!

I’ve been back on a sandwich kick.  We’ve been buying rotisserie chickens, and good bread to make chicken sandwiches.  I love to add pesto, lettuce and cheese to mine.  I’ve also been on a peanut butter, banana and honey kick…so good!  Goldfish have also been a lunchtime staple lately as well as plenty of fruit, granola bars and a small afternoon sweet treat.

It’s a simple lunch but it always tastes good and can be very comforting on a busy day!


Michael was busy in the kitchen while I was at Teacher Training this weekend. Sunday night he made a roast beef tenderloin with rosemary, chocolate and wine sauce.  On the side he served green beans with mushrooms.  I had the leftovers for dinner this week and added some roasted beets and carrots to my plate. I realize now as I write this that I forgot that yummy sauce…I am SO sad!

It was delicious on Sunday and just as good reheated as leftovers the other night.  I love getting two meals out of one!

    I did vote! It was my first presidential election to vote in because the last one I turned 18 a few months after. I have never had pumpkin whoopie pies but want to make them!
