We have been cooking up a storm! This week we didn’t even have to grocery shop because we have so much in the fridge that needs to be eaten and we don’t want to waste it! It’s pretty nice actually. This week’s menus included chicken Panini’s, butternut squash soup, turkey chili and much more!
We often cook up two or three things that make quite a few servings over the weekend. The leftovers are great for lunches or those random week nights when one of us isn’t home. We keep everything in air tight containers and if it’s been in the fridge for a week or so we move them to the freezer.
Let’s get to the food shall we?
I love all things pumpkin and pumpkin pancakes are my favorite. Trader Joe’s makes a great mix that is really easy to make and tastes delicious. Coffee with pumpkin spice on the side makes it that much better!
Since we have been cooking so much lunch has been an amazing variety of leftovers. There is so much to choose from that I never get bored! I always pack plenty of fruit, a granola bar and a yogurt for snacks. My snacks never vary but they are good and healthy so it’s ok by me!
The highlight of this week was the Chicken and Shrimp Gumbo that Michael made on Saturday night. So good and delicious! It hit the spot after a day in the yoga studio.
In the gumbo was collard greens, spinach, chicken, shrimp, okra, celery, onions and lots of spices. It’s delicious!
Michael made this dessert for me when we first started dating, we have made it every fall since. Chocolate chip bread pudding is so good! The recipe is a little bit complicated but it is so worth it!
We serve this warm with a scoop of vanilla ice cream…delicious!
