What I Ate Wednesday! Spooky Snacks and Healthy Halloween Treats!

Oh, could the theme of this months What I Ate Wednesday be any better? I think not!  I’m not sure what it is but the change of seasons, particularly the fall brings out my sweet tooth and love of comfort foods like no other. Last week it was apple pie, this week it was pumpkin chocolate chip cookies and there is still a half a bushel of apples left just waiting to be used in a fall recipe!  Last week I suggested portion control but sometimes we can do more than just limit the number of cookies or the size of our piece of pie to make our treats healthy.  One of my favorite tips is to substitute apple sauce in place of oil.  It is a 1:1 ratio and usually just requires adding 2 to 3 minutes to the baking time.

Just the other day I went to Trader Joe’s to stock up on all my favorite fall things.  In the shopping cart was Pumpkin Pancake Mix, Honey Apple Butter, Pumpkin Granola and Pumpkin Spice Rooibos tea.  I’ve also been loving the Starbucks Pumpkin Spice Latte.  I saw that Coffee Mate makes a Pumpkin Spice Coffee Creamer…I think I’ll be picking some up this weekend when we grocery shop!


I’m trying to change things up with breakfast as I’ve been a bit bored lately with the options.  This week I have cinnamon raisin english muffins with honey apple butter and a small bowl of pumpkin spice granola with skim milk.  I’m trying to make an effort to drink my Skinnygirl Cleanse again, I’ve been feeling bloated and it just won’t go away!


Always take a cup of coffee with me in the car for my drive to work.  I’ve been adding Pumpkin Spice to it….so good!


We have had tons of left-overs lately with all the stews and soups Michael has been making.  My favorite is the Lemon Chicken Orzo soup, he made another batch on Sunday just for lunches.  He is such a good man and I am so lucky.

Throughout the day I have my usual snacks, nothing new or exciting there!



Dinner has been pretty awesome lately in our house! I have to admit part of this is probably because of my new schedule.  I have been running and working out in the morning so when I get home from work I can just relax, make dinner and do whatever else may need to be done.  I find that cooking is less of a chore and dinner itself is more enjoyable and not as rushed.  It’s such a huge change in my life, I love it!  The other part of why dinner has been so awesome is because of Michael.  He’s been in the kitchen a lot lately and I am not complaining!

Warm Fall Dinners!

On the bottom is Mike’s Mom’s Lentil Soup.  So good and delicious.  On the side, some greens with croutons, carrots and cucumbers.  On the top is what I came home to on Sunday night courtesy of Michael. That would be Julia Child’s Beef Bourguignon! It took about 6 hours to make and was worth every second.  It was so delicious, flavor and good.  It was the perfect meal to enjoy after a tough day in the yoga studio!

    Have you tried Good Belly juice? I was feeling bloated/having digestive issues and I’ve been drinking it for about a week and it worked wonders! Your soup looks delicious. One of the things I love about morning workouts is having that extra time in the kitchen in the evening. I need to get back into that habit!
