Happy Wednesday! 5 days to go! (at this point I feel like I should just keep the countdown going, sorry if you are just ready for this marathon to be over!) I intend to switch things up today and not talk about running or the marathon but food! It’s What I Ate Wednesday and we all know I love this party! Before we get to that I do need to share two things with you all, mostly a few thank you’s! A big shout out to Erin over at Creative Soul in Motion! Erin is actually a blogger turned real life friend and I’m so honored that she wanted to interview me for her blog. I answered a few running and marathon related questions so check it out and show her some love! Also a big thanks to Tina at Carrots n’ Cake for featuring me in her Boston Marathon Runner Profiles! Everyone’s well wishes and excitement surrounding the Boston Marathon is truly inspiring and goes a long way to make an already special event that much more exciting! Thanks everyone!
Moving on to another favorite thing of mine…food! Many thanks to Jen over at Peas and Crayons for hosting the party! Don’t forget we are challenging you this month to add an extra cup of veggies to you meals! Are you sticking with it? I certainly have been trying but some days I substitute fruit for veggies! Just as healthy and just as delicious!
Michael had the brilliant idea to buy cinnamon bread while we were grocery shopping over the weekend. He told me his mom used to make him french toast with the bread so we decided to make it for breakfast on Easter Sunday! It was so good! I paired mine with some fresh strawberries and as always a cup of coffee!
It was so good and left me feeling full and satisfied all the way to Easter dinner!
I really didn’t put much thought or effort into lunches this week. In my mind it’s a short week and no need to worry about lunch. Actually 4 days of work and lunches is not something to blow off. Luckily I was able to make a “mini” quesadilla with some leftover ingredients from last night’s quesadillas and bring some leftover rice. A nice change in pace from the usual lunches.
A banana, an apple, a peach Greek yogurt and a granola bar to munch on throughout the day!
Saturday night Michael and I decided to make homemade Thai food! I’d found a recipe for Soba Noodles with Peanut Sauce on Runner’s World and really wanted to give it a try. Michael offered to make his homemade fresh Spring Rolls again and before we knew it we had a whole meal planned! It came together pretty quickly and was absolutely delicious!
Funny story about this meal and recipe, I took the first bite of the noodles and immediately noticed they had quite a “kick”! Michael and I started eating them and our mouths were on fire because the noodles were so spicy. Well the recipe called for sesame oil, I took it out of the pantry and dumped in the 2 tablespoons it called for and thought nothing of it. Turns out the sesame oil Michael had was Hot Sesame Oil! Michael was drenched in sweat from the spiciness of the dish! We’ll definitely be making these again…with regular sesame oil!
