Happy Wednesday! I’m in a great mood today. My massage was amazing and my body feels so much better. It was nice to relax and I slept like a baby too. A 90min massage is really the way to go. That extra half hour really ensures that all those knots and tense spots get all the attention they need. Tonight is date night with Michael which is always fun and brightens up the middle of my week. All good things over here to say the least!
April brings not only a new month with new goals and new things to look forward to but also a new theme for What I Ate Wednesday! Peas and Crayons has joined Green Giant in a challenge to eat an extra cup of veggies each day for 2 weeks! Sounds like a great idea if you ask me! Who couldn’t use an extra cup or veggies (or fruit) in their diet each day? Personally some days are pretty veggie-tastic with lots of fruits and vegetables making their way into my diet while other days seem to fall short, particularly when talking about the green kind of vegetables. I’m going to try to get an extra cup of veggies each day this month and I hope you join me in the challenge!
I’ve been really loving overnight oats made with strawberry Greek yogurt and lots of toppings. I really can’t get enough of it!
On top of the oats I add granola, fresh blackberries, raspberry jam and peanut butter. It’s such a good combination! A cup of coffee with almond milk to go with my oats! Unfortunately I finished off the rest of the rolled oats yesterday, I think I’ll have to try a cereal bowl with yogurt and delicious toppings tomorrow morning!
Leftovers! I’ve been loving leftovers lately for lunch. Tapering has me feeling very hungry and I have been trying to eat a more filling lunch. Additionally I’ve added about a tablespoon of peanut butter to my mid-morning banana. It makes it more satisfying and I find I can hold off on lunch until about 12:30 when I eat that. One of my favorite lunches is leftover pasta. On the side I had a granny smith apple, a TLC granola bar and a Chobani Greek Yogurt!
I have two favorites to share this week. One was inspired by barbecue sauce and not just any barbecue sauce but homemade sauce! Saturday before Michael and I headed out for a little date night we stopped by our friends Mike and Theresa’s to have a drink and socialize. Mike had just made a pot of homemade barbecue sauce to use with their dinner. I happened to steal a little taste and it was delicious! Lucky for me Theresa sent me home with a little container of my own. Michael and I decided to make homemade barbecue chicken pizza on Sunday night. We used whole wheat crust, a little pizza sauce, cheese and carmelized onions in addition to the barbecue chicken. It was so good! On the side we had some Alexa Sweet Potato Waffle Fries and a casaer salad. I also happened to be craving a beer that night and since that NEVER happens I decided to partake in a Blue Moon with dinner.
Another favorite of the week was salmon that I made for dinner on Monday night. I love seafood and particularly salmon. I usually try to eat it at least once a week and honestly, it never disappoints. I topped the salmon with some olive oil, salt, pepper, panko bread crumbs for added crisp and some lemon juice. Into the oven to bake for 20 minutes at 325F. I also roasted some asparagus with oil olive, salt, pepper and lemon in the same oven. While that all cooked I made some rice pilaf on the stove. Less than half an hour later dinner was all done and ready to eat. It was delicious!
Eating healthy can be quick and easy! You just need to plan ahead a little bit!
I have a sweet tooth and love having a little something after dinner on the weekends. Friday night while running errands I stopped into my favorite bakery, Sweet, to pick up a little treat for myself. Normally I get their red velvet or carrot cake cupcakes but they were all out of carrot cake and the woman in front of me took the last red velvet. Darn! I decided on a mint mocha cappuccino cupcake instead. It was delicious!
Definitely worth checking out their shops if you are ever in Boston! They have stores in Back Bay and Harvard Square!
