Happy Wednesday! I hope you are all having a great week. Mine is good but I feel a little out of sorts. Normally I run in the morning but now it’s pitch black again and light at night again. I’m readjusting to studying in the morning and running at night. And I’m just a little tired from the time change! Soon enough it will all feel normal!
Before we get to the food I wanted to share that I was the featured athlete this week on The Athlete’s Plate. I think it is really nice that Matt showcases a different athlete and blogger each week. Thanks Matt for choosing me this week! I also wanted to thank you all for your kind words on Twitter and in the comments lately! It makes me feel great that you all find my posts motivational, inspirational and informative. That is always my mission when I sit down to write. Now, are we ready for the What I Ate Wednesday Party?! I shared my favorite meal of the week yesterday and the recipe for Pasta with Cannelini Beans, Garlic, Roasted Tomatoes, Spinach and Lemon Chicken. It was so delicious, and filling…perfect meal to fuel for a long run with! If you missed it I would certainly check it out today! It’s been pretty warm here in Boston the last week or so with highs in the 50’s and 60’s. I haven’t really been craving my oatmeal like normal. What?! Yes, I know. Instead I’ve been enjoying cereal with almond milk and waffles with fresh fruit on top. Sunday morning breakfast was extra special though! Michael made homemade french toast! I slept for a good 12 hours, laid in bed, read a magazine and then had french toast with a fried egg on the side. Perfect Sunday morning if you ask me! Michael used cinnamon, and nutmeg in the batter with a splash of vanilla. I also had a very good cup of coffee with breakfast!
We had some awesome fresh bread leftover from the paninis we made on Sunday night and also had bought a fresh roasted chicken from Whole Foods. I made a delicious sandwich with some chicken, cheddar cheese and spinach on it. I used a small amount of organic mayonnaise on one slice of bread. Yum! On the side I had some wheat thins, an orange, a Chobani Greek Yogurt and a granola bar.
I’m not sure if it is the warm weather or what but I’m really loving sandwiches for lunch lately and lots and lots of fruit!
I’m a big fan of brown rice. Particularly brown rice mixed with veggies, some protein and a sauce of some kind. The other night I made a batch of brown rice with grilled chicken and shrimp in it, steamed broccoli and Trader Joe’s General Tso’s Sauce. I fried an egg and tossed it in at the very end. I only add the sauce to the pan with the chicken, shrimp and broccoli. That way not everything is covered in sauce and it just adds a hint of flavor.
It was delicious! On the side I had a glass of wine because sometimes you just need a glass of wine!
Nothing fancy but good food all around this week!
