Happy Wednesday! Can you believe it’s the middle of the week already?! It’s flying on by. It has been a pretty quiet week so far with good runs and lots of study time! Tonight Michael and I are making dinner, relaxing and watching Modern Family! This little tradition of ours makes me love Wednesdays!
I’m so glad you all liked yesterday’s post. Sometimes it’s nice to share what is on my mind rather than a workout, running tips or something about yoga. So remember last week I told you all that What I Ate Wednesday was going to have a new theme this month? Well March is here and the new theme is Going Green! We are sharing our favorite green vegetables, herbs and fruits by adding them to all our meals this month. With St. Patrick’s day less than two weeks away the theme seems fitting!
Here’s a look at this week’s eats…
We all know I love my oatmeal! I recently bought a new brand of organic oatmeal called Mom’s Best. And it is so good! The oats get so voluminous and fluffy. I love it!
I’ve been making my oatmeal with water and adding a drizzle of almond milk on top. Fresh strawberries were on sale this week and they have been making their way on to my oats almost every morning! I’m also pretty addicted to Nutella on my oatmeal, it’s a good thing the jar is almost empty because I really don’t want to make this a habit! Speaking of habits, remember I gave up coffee awhile ago? I’m back on it. It started innocently enough with a cup here and there on the weekends with brunch or relaxing. And then I started making a cup on Monday morning’s because it tasted so good on Sunday. Now, I’m drinking it almost everyday again. I’ve decided eliminating it as a whole is just not going to happen so I plan to limit my self to 3 to 4 days a week. Doable? I think so. So yes, there is a delicious cup of coffee with skim milk and sugar pictured. I’ve also been drinking an Emergen-C every morning. I think it’s really helping my immune system and I plan to keep doing this until April when I run the Boston Marathon.
Lunches can really vary for me during the week. Some days I have leftovers, other days I have a sandwich or a salad. On Monday’s though I make lunch for Michael and I. He loves cold cuts on sandwich thins with banana peppers and honey mustard. I can’t say I blame him because it’s a delicious combination! I switched mine up a bit and put some roasted red peppers on in place of banana peppers. On the side I had a bag of Pirate’s Booty. A little side note on this, I just recently tried this for the first time and man o’ man do I love it! The fruit of the day was grapes. Later in the afternoon I had a few of Michael’s Mom’s chocolate chip oatmeal cookies. They are so so good. So good in fact, I need to get the recipe to share it with you all!
Sometimes I just love lunches like these. They can be so good!
When I was grocery shopping the other day I got inspired when I saw a whole wheat organic flatbread. I immediately thought of flat bread pizza and headed back to the veggie section to see what I could put on it. I decided on some sautéed red peppers, onions and mushrooms. I put some pizza sauce on as well and topped it all with freshly sliced mozzarella. It was so good and a nice change of pace from my usual weeknight meals!
I served it with a side of Caesar Salad.
Michael and I have been experimenting with making brownies with apple sauce instead of oil. The first batch we made last week did not come out quite right. It was too dense. I tried again on Sunday and had much more success! I think the trick is two eggs instead of one. Sunday we topped the brownies with a little ice cream. I’ve been enjoying the leftovers plain though and they are delicious!
