Hey Guys! Happy Wednesday to you all! I’m coming off of a runny nose and quite the sneezes today. Luckily it hasn’t gotten in the way of my runs and training. That fact alone makes me happy! I did skip yoga yesterday so I didn’t over do it and slept in as late as possible today. Hopefully this cold is kicked by the weekend! I have lots of fun stuff planned with Michael and our friends in addition to my 13 miler! I also wanted to tell you all that I LOVED all your comments my Favorite Things Post from yesterday! It appears that the variety was well received, maybe I’ll do another one like that soon.
Who is psyched that it is leap day and the last day of February?! I’m personally ready to move on to March. I’m looking forward to the time change, running in daylight during the week, long runs and the start of my taper and a new WIAW theme courtesy of Jen at Peas and Crayons! But since it’s still February let’s spend one more day loving our veggies (of course we will continue to love them long past February though)!
I thought I’d mix it up today with the breakfast! Sunday morning Michael and I went to our favorite yoga class and hit the grocery store on the way home so we could spend the whole day relaxing at home. I was craving a delicious breakfast after a butt kicking hour and a half flow. In particular I wanted some of these MorningStar Sausage Patties!
They are delicious and are much less greasy than the meat version. It went well with some homemade pancake and a fried egg. Filling and delicious!
Tuesday’s lunch consisted of some leftover pasta and sauce with a slice of Italian Bread. On the side I had some grapes, and a few Thin Mint Girl Scout cookies. I packed a Chobani Pineapple Yogurt too but never ate it! Are you noticing the trend with the yogurt? I rarely eat it but always bring it because occasionally I am super hungry and need another snack. It’s healthy and delicious and I like to have it on hand.
I also eat a banana everyday. It doesn’t usually end up in a photo because most days it goes in my morning oatmeal. Sometimes though it’s delicious mid-morning or afternoon with some peanut butter.
Sunday night Michael and I made a delicious dinner! We had spent the day relaxing at home and were excited to watch the Oscars. Our original idea was to make something Oscar style with crab meat but once we were at the store we decide crab cake sliders would be much better! We made homemade coleslaw to put on top, mashed sweet potatoes on the side and kale with toasted walnuts. I recently tried Kale a week ago and have been hooked! I’ve tried it so many different ways and each one is delicious.
Everything was so good and it was nice to end the weekend with a good meal and some relaxation!
We made brownie sundaes to eat while we watched the Oscars! I was so relaxed and excited about them that I totally forgot to take a picture! We used apple sauce instead of oil in the brownies and topped them with some peanut butter ice cream, dark chocolate sauce, and whip cream! Yum!
