What I Ate Wednesday! A Compilation of Last Week’s Faves!

Happy Wednesday everyone! I’m pretty happy it is Wednesday.  I’m back to my normal routine with work and life starting today, the comfort of the normalcy feels good.  Wednesday also means we are half way to the weekend which I am thrilled about.  It really can’t come soon enough.  I don’t know about the rest of you but we had some unseasonably warm weather in New England yesterday.  It was amazing to run 6 miles without gloves and a hat or jacket.  I thoroughly enjoyed myself and was a very nice little mid-winter pick me up! I hope you all got out and enjoyed the weather if you were lucky enough to have that little day of spring!

This week’s eats for What I Ate Wednesday are my favorite meals from last week.  So let’s get this party started!

Breakfast. 

Yesterday morning I had a very early dentist appointment.  I’m not a fan of the dentist at all, let alone at 7am.  So I usually treat myself to Starbucks on my walk home.  Thanks to my Mom I had a gift card and ordered a Venti Skinny Cafe Mocha.  It was a nice little treat and tasted delicious! The walk home had me feeling so excited about the warm air and sunshine, oatmeal did not seem to fit the bill.  I toasted up a Thomas’ Cranberry English Muffin and put some raspberry preserves on top.  On the side I had some fresh strawberries and a bowl of Raisin Bran Crunch with almond milk.  It hit the spot!

I love changing my breakfast up based on my mood and the weather!

Lunch. 

On Sunday I did a 14 mile run.  After stretching and showering I was starving! We had gone to a farmers market on Saturday and bought some Pesto Bread from a local baker.  It was delicious bread and I was dying to make a grilled cheese with it! I also had a banana on the side.

Since it was a late afternoon lunch it was perfect to hold me over until dinner!

Dinner. 

Saturday was a snow storm here in Boston.  Michael and I had a low-key day planned filled with yoga, cooking and lots of relaxing!  We decided to make boeuf bourguignon and man o man was it delicious.  It was rich and hearty and filled with veggies and tender beef.  It was the perfect snow storm kind of dinner!

On the side I had a fresh baguette and a glass of water and a cup of warm Chamomile tea.  Perfect.

Dessert. 

I made a Tiramisu to go with our French themed dinner.  I had never made Tiramisu before and was a little nervous it would be a soupy mess but it came out perfectly! The flavors were so good and it was the perfect dessert after a very rich and hearty dinner.

Everything I made this past week was delicious and these meals really were my favorite!

    I have not had pesto bread, but now I want some!

    As I’m vegetarian, I’m not a boeuf bourguignon fan, but I bet it would be good with big chunks of portobello mushrooms instead! I just watched a few old Julia Child’s The French Chef episodes on Amazon the other day, and she’s so full of great tips and tricks; that recipe was one of her specialities, I think.
