What I Ate Wednesday!

Don’t you just love Wednesday?  As the first full week back in the New Year I was expecting this week to be a long one. Surprisingly this week is going by quick!  I have had plenty of good eats to keep me warm and happy this week.  Let’s get this What I Ate Wednesday party started shall we?


I recently bought these jumbo mixed raisins from Trader Joe’s.  They are pretty awesome and make my oatmeal so exciting! As a result I have been eating copious amounts of oatmeal with raisins, pumpkin butter, almond butter and walnuts. It is delicious and I am slightly addicted to it!

Since I am working in the field at customer sites for work my ability to snack throughout the day is a little bit limited since I am not at my desk.  I’ve been starving come lunch time and usually don’t get my granola bar until my drive home late afternoon.

Trader Joe’s Salad, Veggie Chips, Greek Yogurt, Clementines, TLC Granola Bar

This week I picked up a couple salads from Trader Joe’s to add some variety to my lunches.  On the side I packed veggie chips, greek yogurt, clementines and a granola bar.  Yum!


Michael and I had a couch day on Sunday.  We layed around in comfy clothes, watched football and relaxed.  It was much needed and felt great!  We decided to make dinner.  Michael improvised and created stuffed peppers for us!  I made a Caesar salad to go with it.

We used cubanelle peppers and stuffed them with orzo, ground turkey, spinach, tomatoes and feta cheese.  Delicious!


We decided we wanted to have dessert on Sunday.  I had made this chocolate cake with chocolate frosting from Trader Joe’s when Michael and I had been dating for only a few months.  It was delicious and we still talk about how good it was!  I couldn’t find it at Trader Joe’s for the longest time until about a month ago.  I made the cake Sunday afternoon and is was so so good!

    I have some old fashioned oats at my desk, along with a bag of brown sugar and sliced almonds. If I’m feeling crazy, sometimes I’ll add some cinnamon 😉 I need to get those raisins — they look amazing!

    Those raisins are HUGE! Also, my mouth is watering over that stuffed pepper. Stuffed peppers are one my favorite things because they are so easy to do and super filling. I like to put the boca soy crumbles in them for some added protein!

    Great eats! I have been loving overnight oats. Once I figured out how to make them, I can not get enough. They are a creamy delight!
    Packing lunch is tough, it is hard to keep the variety up and not get bored with the same old boring meal. I like to make a soup or chili and bring that in for lunch and then other days I will bring a salad with all the fixings! If I am really struggling I will make a veggie packed sandwich.
    It’s tough! I am always looking for new ideas.

      Thanks! Overnight oats are delicious but I really only like them in the summer. I love hot oats in the winter. Making soup or chili to bring is my favorite. There is something wonderful about eating something homemade and warm mid day that warms me up just so!
