What I Ate Wednesday! Christmas Edition!

Can you believe it is the last What I Ate Wednesday of 2011?  I can’t believe this year is coming to an end already! Well I don’t know about you but I had tons of delicious food over the long holiday weekend and I am so excited to share!

Breakfast.

I really mixed it up over the holiday weekend.  A few days I had oatmeal with a variety of toppings  and the others I had eggs with a side of some fresh fruit and homemade swedish breakfast bread.  Delicious.  My mom made an Egg and Sausage Strata on Christmas morning.  It was so good.  She served it with pineapple, cantaloupe, muskmelon and blackberries.  We had some Swedish breakfast bread while we opened gifts! So good!

Holiday Meals.

I had so many delicious holiday meals it was too hard to show just one!  Christmas Eve we had the Swedish Smorgasbord with my Mom’s homemade Swedish Meatballs! There was also fresh fish, potatoes, beets and cabbage.  So good!  Christmas Day my parents made an appetizer of Shrimp Bisque and for dinner we had Prime Rib, Brussels Sprouts, Mashed Potatoes and Cauliflower, Salad, and Yorkshire Pudding.  So so good!

Desserts.

We had lots and lots of Christmas cookies made by my Grandma.  The highlight was my Mom’s chocolate cream pie which she taught me how to make on Christmas Day! It was so good to learn and see how to make it.  I know a certain boyfriend is looking forward to me making it A LOT.

    My mom made us a very light breakfast and lunch in preperation for the big Christmas dinner. However, the snacks throughout the day totally defeated the purpose of eating light meals!

    I learnt to make my Mum’s (vegetarian) mince pies this year which made me happy but not so much my waistline! Oh well, it *is* Christmas. Chocolate cream pie sounds yummy!
