What I Ate Wednesday! Post Thanksgiving Healthy Eats!

Happy Wednesday!  I love reaching Wednesday, it makes me feel like the hard part of the week is over.  And we get to party thanks to Jen over at Peas and Crayons! I thought many of the other bloggers would be highlighting some of their meals from the Thanksgiving weekend I would do something  a little different.  It also helps that I unplugged for the weekend and subsequently forgot to take food photos.  So I’ll share with you some of my healthy eats from this week as I focus on getting back to normal and cutting back on all those delicious holiday foods!

For breakfast this week I am keeping it simple.  I bought some Almond milk, Cheerios, and Cranberry English Muffins.  I love Cranberry English Muffins and always have them around Christmas since they are Limited Edition.  They are so good! On the side I had a Green Goodness Smoothie with cucumbers, kale, apples, pineapple and other delicious veggies and fruit!

Cheerio’s with Almond Milk, Cranberry English Muffin and Green Goddess Smoothie!

I used to eat breakfast when I got to work but lately I have been waking up an hour earlier than normal (hello 5am!) to finish blogs or study for my personal training certification.  Since I am up and home I just eat while I work or study.  I really love doing this in the mornings.  It makes me feel like I have some uninterrupted time before my day starts!

For lunch I’m opting for healthy, low calorie meals this week.  I made a wrap on a whole wheat tortilla with herb roasted turkey, american cheese, lettuce and cucumbers with roasted red pepper hummus.  Delish! On the side I have blue corn tortilla chips and a clementine.   And later for a snack I have a granola bar with chocolate and coconut on it!

It’s a nice and light lunch and perfect for the week after Thanksgiving! And in keeping with my photo forgetfulness, I ate about half the sandwich and chips and realized I needed a photo! Oops!

For dinner I had a marinated Balsamic Chicken Breast with Broccoli on the side.  I wasn’t overly hungry and decide to skip on the carbohydrates.  Plus I am trying to lose about 5 to 10 pounds before I start training for the Boston Marathon.  I’ve always had success at losing weight by cutting back on carbs!

It was simple yet delicious and hit the spot after my workout.

No sweets this week for me! I’m trying to avoid them this week and recover from all I ate last week which was far too many to be honest.

Are you eating healthy this week after over indulging last week?  Do you eat breakfast at home, on the go or at the office?  How have you been successful at losing weight?  Do you cut back on carbs or focus on portion control?

I wake up so hungry most mornings and have a long commute to work. I could not imagine waiting until I was in the office for breakfast, would probably end up gnawing my arm off.

I didn’t even know they made cranberry english muffins. Where have I been? I always try to eat healthy because after learning so much from all my nutrition classes I am sort of scared to eat certain things.

I ate very smart last week. I didn’t want to create a mindset that it was okay to overeat or eat non healthy foods just because of the holiday. Also, I always try to eat breakfast at home. If I don’t then I am setting myself up for a very unhealthy day.

My weight loss is a work in progress, I am currently down 4 pounds. However, I keep losing and gaining the same 10 pounds over and over. Tracking has been key to my success.

That is super smart of you! I always pack my lunch for work and if I miss out on breakfast at home I pack that for work too. I like setting out all my food for the day, I rarely deviate and choose other unhealthy options. I think I need to start tracking too. Losing the weight will be hard since I am already thin but would like to take some more weight off my frame to make me run faster.

I think I’ll marinate my chicken tonight. 🙂 Yeah, I just weighed in and I’m a little disappointed. Still no loss in ounces either. I guess I’ll have to limit my carbs. I’m training for my first half and I’m seeing success in measuring, down several inches but the scale hates me. Jess

Thanks for stopping by Jess! Hang in there! Your losing inches which is super awesome! While your running so much you may be building muscle so you won’t necessarily see a drop in pounds but it will come eventually! Keep up the good work and good luck with your half!
