What I Ate Wednesday!

Happy Wednesday! I’m sure many of you are off today and home getting ready for Thanksgiving tomorrow with your friends and family! I have the day off from work today and am so excited to be home, relax, and enjoy some down time.  I also plan to get in a challenging workout at the gym today.  I always feel a little better about indulging when my muscles are sore from a great workout!  Tomorrow Michael and I will be running the Marathon Sports Gobble Gobble Gobble Road Race in Sommerville, MA before heading to his family’s house for dinner.  Friday we head to Upstate NY to spend time with my family.  I’m really looking forward to it all!  Are you running a holiday road race? Now on to my eats…

For breakfast I’ve been obsessed with eggs and toast.  I like my eggs fried, scrambled, poached, and really just about any way.  I had a craving for English Muffins over the weekend so we picked some whole wheat ones up at Whole Foods.  Delish!

A side note here: I told you all a few weeks ago I was going to give up caffeine because it was giving me headaches.  Let me tell you.  Best decision ever.  I feel so much better! I’m much more energetic in the morning and have a much easier time waking up. I have noticed I don’t get afternoon headaches and the tiredness in the afternoon I was experiencing has also diminished.  I’m sure some of that is just that I’ve been feeling good lately but I do think the caffeine has really helped!

Sunday evening Michael’s sister invited us over for dinner.  She made a pot of her Mom’s homemade spaghetti sauce, and a big pot of Ziti.  She was kind enough to make extras so that we could all bring some home!  I took a container and brought it to lunch for work this week.  It worked out perfectly since I decided to skip grocery shopping to use up some of the food in my fridge and not let anything go to waste.

For an afternoon snack I had an apple and a Chobani greek yogurt!

Over the weekend Michael and I got the urge to cook! And boy, did we cook up a storm.  We decided to make Indian food.  We made a lamb stew with spinach, chicken Tikka, homemade Raita, and Basmati Rice! It took some time but it was delicious!  My favorite part of cooking this was when Michael looked at me and said, “This better be your What I Ate Wednesday!”

For dessert we made some homemade mini pumpkin whoopie pies.  Michael found this recipe online at Gilt Taste.  They looked delicious and we love whoopie pies so we went ahead and gave them a try.  They use some interesting ingredients and let me tell you…they are all worth it!

    I’ve been on a egg craze lately! I love them every kind of way. They are just so easy, inexpensive, and versatile. I add them to everything. Those pumpkin whoopie pies look delicious! Have a wonderful Thanksgiving!

      Thanks for stopping by! English muffins are the best! I linked to the whoopie pie recipe if you want to make them yourself! They are SO SO good…the tray disappeared quickly and we’ve been requested to bring them to Thanksgiving now!
