Happy What I Ate Wednesday! What My Mom Made Us!

Happy What I Ate Wednesday! I don’t know about you but I can’t believe it is Wednesday already, this week has been busy! I’m working different hours at work a few days this week and it’s completely thrown off my schedule.  It’s only temporary so I can’t complain.  As promised, today I will be sharing some of the foods that my Mom and Dad made Michael and I when we went to visit.  I don’t usually cook like my Mom on a daily basis so I always enjoy her cooking that much more!

Friday night they took us to this amazing Italian restaurant in Schenectady, NY called The Appian Way.  I loved this place the second we walked in.  Why? I love Italy and this restaurant was nothing short of a true Italian restaurant.  The floors were tiled, the lighting was bright, the tablecloths were white with pale pink napkins, there was a fire in the fireplace and there was wine on every table.  The food is made specifically for you so it does take a little longer than a normal restaurant. But the wine is good and if you bring good company you won’t notice! We had calamari to start with an antipasto and lots of bread! Delicious! Then came salad and for dinner I had stuffed veal.  It had prosciutto and mozzarella cheese in it with a Marsala sauce.  On the side I had some cappelini and sauce.   Michael had Penne ala Vodka with sautéed chicken.  We need to go back so I can order that! I don’t love vodka sauce but that was outstanding! Sorry I don’t have pictures to share, I forgot my camera! If you are in the Albany area, definitely make a trip there!

Saturday morning my Mom and Dad made egg sandwiches on croissants.  It’s not something I’d normally eat but man, it was delicious!

My Dad puts this special sauce on it, it’s so good! It’s spicy yet not.  I don’t know what brand it is except it’s called the special sauce!

Saturday night we planned to have a relaxing night, just hanging out chatting.  I requested my Mom make her pumpkin soup and homemade chicken wings.  For dessert I asked she make her brownies with Reese Peanut Butter Cups in them.  When I was a kid my Mom used to always make this on Halloween night.  She’d invite over other families with kids.  We would all head out Trick or Treating.   When we got back we would enjoy dinner and count our candy.  Since our trip was so close to Halloween I felt like I would love the chance to have that dinner again.  Let me tell you! It did not disappoint!

It all tasted so great and reminded me of those amazing Halloween nights as a kid! We watched “Bridesmaids” after dinner.  At which time a delicious cup of tea was consumed.  On the side, more than one of these delicious brownies was devoured!

After a great lazy night I was able to really settle in, relax and get some good sleep.  The extra hour due to the time change certainly did not go unnoticed!  We spent another morning reading, relaxing and chatting.  My family has always had the tradition of a big Sunday morning breakfast.  Traditionally Sunday’s have been have a family day.  We all hang out and eat and do whatever so this was morning was not out of the ordinary.  My Mom cooked up some corned beef so that my Dad could make some homemade hash.

Corned beef hash in a restaurant is not like my Dad’s.  He uses the beef my mom cooks up in the crock pot, some boiled potatoes and carrots, and onions  with herbs.  On top he serves it with some fried eggs and rye toast on the side.  It is always delicious and a nice break from the traditional breakfast fare.
