What I Ate Wednesday! My favorite meals from the past week!

I’ll be honest, I’m really bad at remembering to take pictures of all my meals on a single day during the week.  Instead I find myself taking pictures of meals I’ve made and am proud of or of meals I’m really looking forward to eating.  In essence, they are meals I’ve made while enjoying myself and not just meals I made for the sake of eating or to satisfy my hunger pains. This week it also highlights two things I’ve become rather obsessed with. So without further ado…What I Ate Wednesday!

I like to start my morning with a cup of coffee and thanks to fall Starbucks now has there Pumpkin Spice Latte out! I can’t afford one of these everyday so I try to make a more festive coffee at home.  I love adding cinnamon and nutmeg to the grounds and then adding the hot water.  It adds some great fall flavor to the coffee! I make some frothed skim milk and then sprinkle cinnamon on top! I LOVE it and that it keeps $5 in my wallet!

Michael went off to Miami Sunday morning for the Patriots Dolphins Monday Night Football game.  After an early morning airport drop off this was a perfect pick me up! I also made my favorite breakfast food ever…French Toast! I like to add cinnamon, nutmeg, vanilla and a little honey to the egg batter.  If I have it I’ll add some orange rind but I was out of oranges.

I had some fresh cantaloupe on the side because the end of summer is near and melon will soon be out of season!  And since Michael is away I have a house guest staying with me, his Siamese cat Brandy.  She’s more dog like than cat-like and is a huge snuggler and a big talker.  I love having her around and she loves to keep me company.  She sat basking in the sun on the kitchen window sill while I made breakfast!

Most lunches this week were leftovers since I did a lot of cooking but I’ve also been really loving salads lately. They can be filling if you include lots of vegetables, cheese or chicken.  I use a balsamic vinaigrette dressing, it’s my favorite.

I’ve been snacking on my usual Chobani Greek Yogurts mid afternoon. I’ve also had some organic kettle corn which satisfies my crunch cravings with a hint of sweetness.  I also discovered Annie’s Chocolate Chipper Granola Bars this week.  They are SO good! Crunchy, chewy, and sweet with a hint of chocolate.  I am obsessed with them! It’s a perfect way to get my sweets in without having to have a real sweet. I’ve been trying to cut back on sweets since I was going a little overboard.  I think this is a great compromise!

On my off days from running during the week I try to make a nice dinner for myself. Days when I run are busy and hectic and it’s often 8 or 8:30 PM by the time I eat so it’s exciting to be able to eat at reasonable time and have a meal that takes some effort.  I had some ground turkey left in my freezer that needed to be used.  I took it out to defrost while I was at work.  At the grocery store I found some beautiful portabella mushrooms and decided to make stuffed mushrooms.  I also got some sweet potatoes since I was craving these as well!

Every Tuesday my office does a “Tea Time”.  We rotate through the group but someone will bring in a dessert to share.  It’s a nice opportunity to socialize with everyone and makes Tuesday’s go by a little quicker.  This week is my week to bring a dessert to share.  I made an Apple Spice Cake.  It was really quick and easy and is delicious! It’s also perfect for fall!

I still haven’t had time to get the ingredients, buy a blender and try the Green Monster Drink but maybe next week I will! This cool weather has me motivated to cook, I have some good things planned for this week and can’t wait to share again next week! I’m so looking forward to seeing what you have all eaten…What I Ate Wednesday’s keep my meals fresh and exciting thanks to new ideas from all of you!
