Since joining the blog world I’ve been doing and “meeting” some really interesting and talented people. Most of them are other healthy living bloggers. Recently I did a #fitblog chat via twitter which was a great way to start to get involved in the blog community. As a result of the chat I discovered What I Ate Wednesdays, also known as #WIAW on twitter. It’s hosted by the author of peasandcrayons.com. Since one of my September Goals is to keep building my blog, and do What I Ate Wednesdays there is no better time to start than the very first Wednesday of September!
Since I commute an hour to work, am training for a marathon and do everything else life involves I’m often very tired. This means I tend to hit the snooze button too many times and don’t wake up early enough to eat breakfast at home. So I pack a healthy breakfast and eat at my desk.
I go for things that are healthy, and easy to pack. So I go for a cereal like Special K, Multi-grain Cheerios, or Honey Bunches of Oats. I love fruit and think there is no better way to start your day!
Lunch is often eaten at my desk. I do yoga during my hour lunch break on Tuesday and Thursdays. On the others days of the week I use my hour for errands or other things and don’t often go to do those until 1 or 2 o’clock. I like to eat lunch at noon so as a result it is at my desk. On this day I had some Thai food left over from dinner, a juicy peach and Odwalla bar.
Pad Thai is one of my all time favorite foods! My fruits are always what is in season…today it was peaches!
On this particular day I had an 8 mile run to get to when I got home so a snack was definitely needed! I had a Chobani Greek Yogurt around 4PM. I think Greek Yogurt is more satisfying than regular yogurt and the flavors are all delicious!
I often eat dinner late, around 8:30 PM. I try to skip carbohydrates when I am not marathon training during this later meal. It makes me feel better but because I’m training for Chicago I need things to fill me up. I went with a whole grain rice instead of a white rice. I also made a salmon bake. It includes fresh salmon, onions, lemon, basil from window box and fresh tomato. I sprinkle it with a little salt and pepper, wrap it in some foil and bake at 400F for about 20-25 minutes. It’s delicious!
I also had some fresh corn on the cob to go with it! As with my fruit I try to keep all my vegetables seasonal and if possible I try to buy locally. I think farm stands have the best offerings!
After reading everyone’s What I Ate Wednesday Posts from last week I’m very motivated to try some new things. One of the first things I want to try is Green Monster Juice! Stay tuned for more posts and new foods!
