I can’t believe it’s Wednesday again! Time is flying by.  In the world of food not much has changed.  We are still cutting back (never out) on the carbs and loading up on veggies to help Michael lose weight.  I’ve been really impressed with Michael’s dedication to eating healthy.  Even when we are choosing restaurants Michael opts for restaurants that have healthier options on the menu.

In other food news, our house has been struck by the stomach bug.  Michael’s been down and out for 2 days.  White bread and ginger-ale are all that’s cutting it.  I’m keeping my fingers crossed that I escape this round and am hoping Michael feels better soon…it kind of stinks to cook, eat and clean up all on your own! I’ve definitely been making quick and easy meals for dinner since it’s just me.

Breakfast.

Frozen waffles are always in our freezer.  They taste good and are so versatile.  Some mornings I’ll toast a couple of waffles and put peanut butter and bananas on top.  Other days I make a peanut butter and jelly sandwich with waffles.  And sometimes they just taste good with maple syrup on top.

I’ve been obsessed with coconut macaroon coffee with coconut milk.  It’s just so delicious!

Lunch.

There has been a lot of variety in my lunches lately.  Today I have a chicken sandwich with swiss cheese, lettuce and mustard.  On the side I had some coleslaw, carrots and hommus, and an orange.  For a snack I brought strawberries and blueberries, yogurt and nuts.

Dinner. 

To celebrate St. Patrick’s Day we made corned beef for reubens.  We bought marble rye bread, sauerkraut, thousand island dressing and swiss cheese and grilled the sandwiches on our panini press. On the side we had homemade coleslaw, and potato chips.  It will simple but so delicious!

For a quick and easy dinner this week I made a “doctored” Mac and Cheese.  I added chicken, broccoli and parmesan cheese on top.  It came together so quickly and tasted delicious.

Fun fact, I’m not drinking dairy milk so have been using coconut milk instead.  I used it to make the mac and cheese and it didn’t alter the taste at all!

What I Ate Wednesday #69

It turns out that eating less carbs really just makes me want them more.  And really it’s not like I’m NOT eating carbs.  I still am, just not with dinner.  I hoping this is just temporary and my dreams of pasta, baguettes and potatoes will fade soon.   On the other hand though, I’m LOVING how green our plates have been looking and all the veggies we are eating.

With the exception of dinner, breakfast and lunch are what I packed for lunch today.  Wednesday mornings I teach my YogAthlete class at 6am. After class I grab a coffee at the shop next door and head into work.  Once I get to work I get ready for the day and have breakfast.  I leave for the day at 5:30am so I pack breakfast, lunch and all my work clothes the night before!

Breakfast. 

One of my favorite things to pack for breakfast is bread to toast, hard-boiled eggs and fresh fruit.  It makes for a deliciously balanced breakfast! Today I’m eating a cinnamon raisin english muffin with peanut butter and half a banana on top, 2 hard-boiled eggs, and blueberries.  It’s simple but so good!

Lunch. 

Lunch has been a combination of leftover veggies and a roasted chicken.  Somedays that ends up being a wrap and other days it’s a salad.  Today it’s a quinoa bowl with mesclun mix, beets, sun-dried tomatoes, and chicken.  I like to warm the whole thing up.  On the side baby carrots and hommus, an orange, nuts and yogurt.  It’s a rare day if I eat all my snacks. I usually eat only 2 or 3 of the snacks I packed.

I’m pretty excited about this bowl of quinoa, chicken and veggies!

Dinner. 

One of my favorite meals we have each week is fish.  I love haddock with Ritz crackers and lemon.  It’s simple but so delicious.  On the side green beans sautéed with lemon, and a salad.

This meal usually comes together in about 30 minutes.  Quick, simple and so good!

Dessert.

Friday we got an unexpected foot of snow which meant I had an unplanned long weekend.  I wasn’t thrilled about the snow but I didn’t mind a quiet day at home.  I got inspired mid-afternoon to make cupcakes.  I’ve never made them before but gave it my best effort.

I was pretty proud of my creations.  The chocolate cake was so good and the buttercream frosting was delicious! I love cupcakes because it’s so much easier to practice portion control and eat just one.  Plus, they freeze nicely so it’s easier to not eat all of them in one week.

What I Ate Wednesday #68!

I love that WIAW is going GREEN for March!  It truly seems fitting considering Michael and I are really increasing the vegetables and cutting back on the carbs.  Notice I saw cutting back on the carbs not cutting OUT the carbs.  Michael and I both strongly agree in moderation.  He’s trying to lose some weight and well, I’m just being supportive.  We’ve been opting for wraps (Flat Out ones in case you were wondering), sandwich thins for burgers and taco salad instead of tacos and quesadillas.  I like the shift in our diet and feel better with less carbs.  Plus I get to indulge in my love of veggies which is a win if you ask me!

In the name of moderation Michael decided that he wanted french toast on Sunday.  Yes it’s a carb but it’s not something we eat often and it happens to be one of my favorite breakfast foods so I’m not going to argue.  We bought cinnamon swirl brioche bread, you know in an effort to make it extra delicious since it was a treat.  Along with fruit salad this breakfast was extra good. On Monday I had a couple scrambled eggs with truffle oil, a piece of brioche bread (since I’m not the one trying to lose weight I figure it’s my duty to consume the rest of the bread) and fruit salad.  Also delicious.  I’m loving the fruit salad this week.

Lunch has been a good mixture of leftovers.  We had homemade Pho for dinner on Saturday so I had some leftovers for lunch. We’ve also been using leftover salad with chicken in a wrap.  I had some leftover soup too.  The new sides and snacks are carrots with hommus, almonds, apples and yogurt.

On Sunday we made veggie burgers with a grilled portobello mushroom on a sandwich thin and a huge salad.  Last week we had haddock, green beans, beets and salad for dinner.  I love how full of veggies our dinners have been, it’s so good!  I will say that meal planning has been a bit challenging.  Michael and I realize now how much we relied on carbs as a base for our dinners.  I need to look up some low carb meal ideas…if you have suggestions leave them in the comments please!

What I Ate Wednesday #67

This week I’ve been going with the flow when it comes to food.  If I’m craving veggies than I’ll eat more veggies, if I’m craving protein well then I’ve been having a protein shake.  Going with the flow seems to make sense because Michael is trying to lose weight and is adjusting his diet.  We cut out milk and have switched to soy, rice and almond milk.  Michael started to cut out carbs this week so I’ll be going with the flow on this too.  I know I need carbs to be part of my diet but I do think I could stand to cut back a bit so we’ll see how the balance on this comes about.  I’ve also been craving more protein lately so I’ve started drinking protein shakes.  I’ve never been into these so I’m excited about this new addition to my diet.  I am loving that Michael’s a bit more into the veggies lately, I love going to the store and picking out yummy greens and having more veggies with my dinner!

I’ve been loving eggs with truffle oil.  My favorite has been fried eggs with truffle oil, cheddar cheese on toasted italian bread.  It’s so good with fresh strawberries and a cup of coffee.

Lunch. 

This week we are mixing it up with chicken wraps and roasted tomato basil soup.  For snacks I’ve been having an apple, almonds, berries and pretzels.  It’s been delicious!

The roasted tomato basil soup is a new recipe that Michael made over the weekend and it’s absolutely delicious.  I haven’t had tomato soup in a while so this hit the spot!

On Monday I had a protein shake for lunch.  I was home from work and wasn’t quite hungry for a big lunch.  I blended the protein powder, soy milk, ice and a tablespoon of peanut butter.  It was so good and tasted like a milkshake! I never like protein shakes but this one was the best I’ve ever had.  A woman at work recommended it and gave me some samples, I think I’ll be ordering this and having one more regularly!

Last week Michael and I decide to switch up our seafood meal, so we made baked stuff shrimp.  We made homemade crabmeat stuffing with Ritz Crackers and baked the shrimp in the oven.  On the side we had rice pilaf and broccoli rabe.  It was really good!

What I Ate Wednesday #66

Is it really Wednesday again? I love a good short week and a nice long weekend.  Almost everything featured on here today I ate over the holiday weekend.  I’ve been taking some time lately to pay a bit more attention to what foods I’m eating and how I can clean up my diet a little bit more.  One of the things I’ve noticed is that I choose some foods out of convenience when I could just as easily choose a less processed, more natural option.  Case in point, I always reach for granola bars when I could just as easily have a handful of raw nuts.  I’ve also been thinking of switching from milk to soy or almond milk.  About a year ago I was only drinking almond milk but I went back to skim milk after a few months.  I struggle with congestion and post nasal drip, I’ve read where diary can be a cause of this. I bought soy milk this week at the store so we’ll see how it goes.  We also went with soy ice cream this week too, again something we used to eat but stopped.  I have a few more dietary changes I’m considering…more on that as it happens.

Having a lazy Monday morning is all sorts of awesome.  To make it even more awesome we made scrambled eggs with shallots, green peppers, spinach and some leftover steak.  We topped it with cheddar cheese and had whole wheat toast on the side.  And of course, we started the morning out with coffee!

It was so good and the perfect way to start the day!

Lunch. 

We have been BORED with lunches.  To spice it up a bit this week we bough lean cuisines and some burritos.  I also switched out Goldfish for pretzel Goldfish…they are so good!

When I’m home during the day I often have a larger breakfast so I’m not in the mood for a large lunch like I eat during the week.  My go to mid-afternoon snack is smoothies.  They are usually packed with protein, fruits and veggies and keep me full until dinner.  The other day I had a strawberry banana smoothie…it was so good!

Michael was away over the weekend so I was on my own for meals.  I’d been craving homemade mac and cheese for weeks so I decided to make a dish of it.  I paired it up with different sides and proteins to make each meal it’s own.  I love doing this when it’s just me because it makes meal prepping easier, and cuts down on the dishes too!

For the first night I had mac and cheese with some pan-fried haddock and a glass of wine.  The next night I paired it with some chicken tenders and swiss chard.  It was simple but delicious and comforting for a couple nights on the couch watching movies!
