What I Ate Wednesday! Cooking Up A Storm!

I love these posts when I have tons of good food to share!  This past weekend Michael and I had no plans, so we relaxed and enjoyed.  We did what we do best; shopping, yoga, walks, and of course cooking! Sometimes cooking can feel like a chore to me but this weekend it was calming and peaceful…something about mixing up ingredients to make something wonderful.  Plus there really isn’t anything better than a house smelling of delicious food!

Breakfast. 

Saturday morning was welcomed with hot coffee and an apple pancake puff!

The recipe has a lot of egg in it so texture wise it is more frittata like than pancake. Either way, it’s amazing.  I was inspired by the few apples we had left from apple picking last month so I decided to use them all up!  I made an apple bread to be enjoyed for breakfast. It’s so moist and delicious!

I love starting my day with something homemade and a cup of coffee…it warms the soul.

Lunch. 

A day of cooking leaves me a hungry girl and what is better than comfort food on a cool fall day?  Nothing!  I made a grilled cheese with some goldfish on the side.  So good!

In my effort to use up the apples I decided to make homemade apple sauce.  I’ve been taking some to work this week with my lunch and it is so good! I was surprised at how easy it was! I’ll definitely be making my own again.

I added lots of cinnamon to mine so I guess you could say it was more of a cinnamon apple sauce!

Dinner. 

Saturday was date night in so we made pan seared scallops with risotto and garlic bread.  The scallops were done scampi style and were delicious!  Scallops are moving to the top of my seafood list!  Wine to accompany dinner! :)

Sunday afternoon was lazy and filled with football.  Michael had put a roast in the crock pot and let it cook for about 8 hours.  It was so tender and delicious!  The potatoes and veggies were so good too!

I love home cooked meals!  We were saying on Saturday how it’s hard to go out knowing we make such good food at home and can enjoy it in comfy clothes!

If you missed them the first time they are back for round 2…pumpkin chocolate chip cookies! Easy and oh so good right out of the oven!

What I Ate Wednesday! Some weekend eats…

Can you believe it is Wednesday already?! Where has this week gone? Last Saturday Michael was busy with work and was out for a guys night.  I was grateful for some time to myself.  I spent the day baking, shopping for 2 blissful hours at Macy’s before heading to Trader Joe’s to stock up on my favorites.  I bought far more than I needed and if the label said pumpkin, it likely went into my basket.  Pumpkin pancake mix, pumpkin cream cheese, pumpkin butter…I think you get the idea.  I spent my night making some homemade soup, sipping wine and watching movies.  I’ll share my eats from Saturday with you all today!

I started off the morning with a cup of coffee.  I LOVE putting some pumpkin spice into my coffee grounds.  It adds some delicious fall flavor to my coffee! I whipped up a few eggs with some skim milk and added some cheese.  Scrambled eggs are the best.  I also had a whole wheat english-muffin with some strawberry preserves. It was a perfect way to start my day!

Since I’m not marathon training right now and am getting over a cold my appetite has been much lower.  This held me over throughout the day so I didn’t have any snacks or lunch.

For dinner I made a Lemon Chicken Orzo Soup.  It is an Ellie Krieger recipe so it’s pretty healthy and full of veggies, chopped boneless chicken breast and orzo! It’s really easy to make, and it comes together in less than hour and is really delicious.  On the side I made mini grill-cheese sandwiches on ciabatta bread…it was Saturday night after all!  I had some blush wine from Cape Cod, MA too.  I’m not much of a blush wine kind of girl but this was actually pretty tasty.  It was a little sweeter and kind of mild but it had nice flavor.

I think it’s important to use up ingredients that are remaining in different ways so that they don’t go to waste.  This can be challenging for me since I live alone and there can be ALOT left…no one likes to eat the same thing all week!  I used some of the remaining bread and cheese for dinner on Monday.  I combined them with some sautéed Portobello mushrooms and red onions.  On the side I made a romaine salad with tomato drizzled with balsamic vinaigrette.  It was delicious and the left over soup and bread is making some easy, healthy and satisfying lunches at work this week!

What I Ate Wednesday! My Weekday Favorites!

Happy Wednesday Everyone! Let the What I Ate Wednesday Party begin! This week I am loving some healthy eats.  I found some great toppings and flavorings for my oats, am loving some pumpkin flavored Clif Bars, and am showing off my favorite go to meal. So without further ado…

For breakfast I have been loving over night oats made with skim milk, greek yogurt, cinnamon, blueberries, and a dollop of strawberry jam on top!

For lunch I am really  loving veggie sandwiches with humus on a pita. With so many veggies out there you can easily change it up and keep it fresh and fun.  This week I used sprouts, lettuce, cucumbers, red peppers, and avocado.

On the side I’ve been eating pretzels, an apple we picked at the orchard and greek yogurt.  For a late day snack I am LOVING the Spiced Pumpkin Pie Clif Bars! They really do taste like pumpkin pie.

For dinner this week we had one of my favorite meals.  Michael and I make this a lot.  We are lucky living in Boston because we have lots of access to fresh fish so this meal is an easy choice.  To mix it up we choose different sides and vegetables in season.  We usually use haddock or cod with parsley, and Ritz crackers on top.

Also this week I’ve been really enjoying homemade apple bread.  It’s nice and moist and just a hint of sweetness!

What I Ate Wednesday! Meals from a Saturday Rest Day!

I love What I Ate Wednesdays! They are so fun and I really enjoy taking pictures of food from a whole day and find that it makes me think more about what I eat.  I want it to taste good, be healthy and look good too! Michael and I had plans for a down weekend.  Just quality time together, good food and lot’s of rest.  Did you see yesterday’s post about enjoying a rest day?  So here is what we ate!

Friday…

I want to a farmers market at lunch and got lots of delicious vegetables! Michael went to Bob’s Italian Food Imports and got us some Italian Marinated Steak Tips, fresh rolls and some fresh cheese! We made steak sandwiches with fresh corn and potato chips from the fresh potatoes at the farmers market.  It was so delicious!

Saturday morning we made pumpkin pancakes with fresh peaches from the farmer’s market! We used Trader Joe’s Pumpkin Pancake and Waffle Mix which is delicious and has the recipes right on the back…

We were out and about Saturday…see my post about enjoying a rest day…and stopped at this little hole in the wall pizza place…

The pizza…particularly the Sicilian was out of this world but I got one of each style to try both!

We went apple picking, and stopped at my favorite farm, Wilson Farm to get groceries for dinner.  We made a Lamb Ragout with Polenta! We used the fresh vegetables from the farmer’s market and fresh lamb.  It was good and filled with fresh fall flavors and kept us warm on a cool fall night!

I also made a fresh homemade apple pie with some of the apples we picked! It came out wonderful and was the perfect ending to a weekend filled with good foods!
