What I Ate (Yesterday) Wednesday!!

Who is psyched we are half way through this week? I am! For those who didn’t have to work on Monday, Wednesday probably came pretty quick! I think for the first time in What I Ate Wednesday history here on LiveRunLoveYoga I actually took photos of an entire day worth of eats.  Yes that is right.  Your going to see breakfast, lunch and dinner all from one day!   As always, a big thanks to Jen at Peas and Crayons for hosting this party!

Breakfast.

I had to completely resist the urge yesterday to have oatmeal with almond butter, raisins, walnuts and jam.  We know I am obsessed with oatmeal lately but variety is the spice of life right? So today I made whole wheat waffles with banana sliced on top and maple syrup! It was delicious.  Yesterday it snowed in Boston and I did an easy 5 mile run so a cup of hot cocoa was completely necessary to warm up!  I make it with almond milk and Ghiradelli hot chocolate mix and a dollop of whip cream on top.

Lunch. 

I was working at a customer site all day yesterday so I packed lunch to bring with me.  My job has shifted a little recently so I’m not sitting at a desk all day.  Instead I do my office work at home and spend the rest of my time at customer sites doing repairs.  When doing repairs at customer sites it is so easy to lose track of time and just stay buried in the work.  I really have to force myself to stop and go eat.  It’s still new so I’m still figuring out a schedule and routine.  Anyway, I made a delicious sandwich with chicken, american cheese, spring mix and a little bit of humus dressing from Trader Joe’s.  It is so good.  I also thoroughly enjoy it grilled!  On the side I had some veggie chips and an orange.  I packed a Chobani Greek Yogurt and a granola bar for a snack but never ate it.  Water to drink.

Dinner.

Michael had a curling tournament over the weekend so I had Saturday to myself.  I took the opportunity to make a big pot of risotto to eat throughout the week.  I added sausage, peas and mushrooms to the risotto and cooked it with some chicken broth.  Delicious and I love having a pot of good, warm food to eat all week!

I was craving some green in my life so I made some broccoli to go with it. I quickly chopped the end off the broccoli crown and used the Ziploc Steamer bags to steam the veggie in less than 2 minutes. Talk about quick and easy.

I really like them and they eliminate the clean up of a pot or pan.  They cost only about $2.5o a package so it is pretty reasonable.

With dinner I had a cup of tea.  How do you know it is winter in New England? I constantly drink tea to hydrate and stay warm!  I chose herbal tea to avoid the caffeine. It is delicious!

Dessert. 

We are still working on that Chocolate Cake from last week.  I ate the last of it last night with a scoop of Frozen Yogurt with fudge and peanut butter cups in it! It was so good.  It seemed like a good night to have a little sweet, it was cold and rainy and I spent the night relaxing and blogging!

Don’t you just love Wednesday?  As the first full week back in the New Year I was expecting this week to be a long one. Surprisingly this week is going by quick!  I have had plenty of good eats to keep me warm and happy this week.  Let’s get this What I Ate Wednesday party started shall we?

Breakfast.

I recently bought these jumbo mixed raisins from Trader Joe’s.  They are pretty awesome and make my oatmeal so exciting! As a result I have been eating copious amounts of oatmeal with raisins, pumpkin butter, almond butter and walnuts. It is delicious and I am slightly addicted to it!

Lunch.

Since I am working in the field at customer sites for work my ability to snack throughout the day is a little bit limited since I am not at my desk.  I’ve been starving come lunch time and usually don’t get my granola bar until my drive home late afternoon.

This week I picked up a couple salads from Trader Joe’s to add some variety to my lunches.  On the side I packed veggie chips, greek yogurt, clementines and a granola bar.  Yum!

Dinner.

Michael and I had a couch day on Sunday.  We layed around in comfy clothes, watched football and relaxed.  It was much needed and felt great!  We decided to make dinner.  Michael improvised and created stuffed peppers for us!  I made a Caesar salad to go with it.

We used cubanelle peppers and stuffed them with orzo, ground turkey, spinach, tomatoes and feta cheese.  Delicious!

Dessert.

We decided we wanted to have dessert on Sunday.  I had made this chocolate cake with chocolate frosting from Trader Joe’s when Michael and I had been dating for only a few months.  It was delicious and we still talk about how good it was!  I couldn’t find it at Trader Joe’s for the longest time until about a month ago.  I made the cake Sunday afternoon and is was so so good!

Happy Wednesday! I’m so excited, one more day of work left and then I head home for the holidays! I really can’t wait.  My family is Swedish so our holidays are filled with lots of Swedish foods like limpa bread, my Mom’s homemade Swedish Meatballs, red cabbage, beets, fish and potatoes.  It all contains lots of cream but it is so delicious.  Since I know my Mom will also be making an incredible Christmas dinner on the 25th the eating won’t stop on Christmas Eve.  This week I’m trying my best to stick to healthy meals and good for you options so I won’t feel so bad come this weekend.  A big thanks to Jen at Peas and Crayons for hosting this party all year!

My newest breakfast obsession is oatmeal with lots of delicious toppings.  I don’t have a ton of time to eat breakfast each morning and making oats on the stove just isn’t happening.  I buy the Trader Joe’s brand of oatmeal and microwave it with water.  I add a splash of Almond Milk on Top with Almond Butter, Honey Apple Butter and some walnuts.  It is so delicious! And perfect on these cold mornings.  I also have a glass of orange juice.

Some days I like to mix it all together and other days I like to leave it on top and pick and choose what I add to each bite!

Since I’m heading out-of-town for the holidays I decided to only grocery shop for the essentials so I wouldn’t waste any food.  I had lots of lettuce and salad toppings so that is lunch this week! It kind of worked out perfectly since salad is a healthy, low-calorie lunch option.

I kept my salad simple with just some avocado and cucumber on top.  I use an organic Caesar dressing litely drizzled on top.  On the side I packed some Veggie Chips.  They are so delicious, except the green ones.  I’m not a fan of those!

Snacks this week have been fruit and some of my favorite Trader Joe’s holiday cookies.  I love the Joe Joe’s from Trader Joe’s (that is a lot of Joes!) and they make them chocolate dipped for the holidays! I always treat myself to a box of them.

I’ve been trying to keep dinner simple and delicious.  And quick.  I’ve been busy lately with holiday things, fund-raising, running, etc. so spending an hour preparing dinner is just not happening.  I grilled some thin cut boneless pork chops and baked some Brussels sprouts and sweet potatoes on 400F for 25 minutes.  I put some homemade pepper relish from my aunt on the pork. It was quick and easy and delicious!

I also wanted to share some of the delicious food Michael and I had at Legal Seafood on Saturday in Boston!  We celebrated our Christmas by getting all dressed up, going to dinner and my gift was to see The Radio City Christmas Spectacular! It was a great night! At Legal we got the Legal Experience as an appetizer and 6 raw oysters.  We don’t normally get things like that so it was a special treat.  It had two shrimp cocktail, tuna sashimi, two shrimp wontons and two crab cakes!

We ordered a small salad and an entrée of mashed potatoes, broccoli, scallops, shrimp and sampler of tuna, salmon and swordfish all wood grilled.  We joke that we had the 7 fishes!  It was a delicious meal…thanks Legal Seafood!
