What I Ate Wednesday! Sometimes I Eat Leftovers!

Hey Guys! I’m so happy it is Wednesday! Why? Michael and I have a date night planned tonight and I haven’t seen him in over a week.  He’s been away curling and I’ve been busy traveling, doing yoga and the like myself.  This is a rarity for us to go this long without seeing each other so I’m looking forward to tonight for sure.  Last night’s run went as expected.  A little bit good, a little bit frustrating.  All in all I felt better than I did before the break and am glad to be back out running and training.  Success.

I’ve been busy.  A good kind of busy.  Dinner dates with girlfriends to catch up,  dinner out with my family over the weekend, Valentine’s Day dinner last week with Michael and lots more.  What this means though is that I’ve been eating out a LOT.  When I have weeks where I know I will be eating out more than normal I don’t grocery shop as I regularly would and buy some healthy veggies to eat when I am home and to pair with leftovers.  I also love taking my leftovers to work for lunch.  As such this week’s What I Ate Wednesday features lots of leftovers.

Breakfast. 

Luckily this meal has been leftover free! I did come up with a new oatmeal combination that is absolutely delicious.  So delicious that I’ve deemed it a “special treat breakfast” so it doesn’t become a habit.  Oatmeal with bananas, strawberries, almond milk and Nutella.  The Nutella is what makes it a “special treat breakfast”.  And quite honestly I wouldn’t want the sweetness of chocolate and hazelnut everyday.

It is really delicious and it all melts together as the Nutella gets soft.  Every bite tasted so good!  Of course I had my glass of orange juice with it!

Lunch. 

Monday’s lunch consisted of leftovers! My family went to dinner on Saturday night to this amazing Italian restaurant for dinner.  Everything is homemade including the bread and gelato I had for dessert.  We had appetizers and salads too so by the time dinner came I was almost full.  Luckily I got to enjoy the rest of my Penne a la Vodka with Chicken for lunch.

I studied for my NASM personal trainers exam while I ate.  A little while later I enjoyed the Chobani yogurt and granola bar.  Around 4PM I enjoyed my apple since I was heading to a yoga class at the Put Some Miles on Your Mat fundraiser and didn’t want to be hungry! Spacing my meals and snacks out through the day really helps me to stay energized and I never feel like I over ate.

Dinner. 

This is dinner from Sunday.  I drove home from visiting my family in NY and after being out with friends and to dinner with night before I was ready for a lighter meal and some greens.  I wanted to get some laundry done, studying done and catch up on blog things so I wanted it to be quick.  Luckily there was some left over barbecued meat from the week before and some baked beans.  I threw together a salad with avocado and cucumber and tossed it with some Italian dressing.  I also finished up a bottle of open wine!

It may look pretty on the plate for the picture but I can assure you that when I ate it was a big old delicious mess!

Dessert. 

Let’s chat about this for a quick second.  I have thought to myself, “oh some dessert would be delicious tonight” every night for the last week.  Dessert even exists in my house.  Yet I always get busy blogging or studying and before I know it, it’s after 10pm and I’m just ready for bed.  No dessert for me.  And no pictures for you.

So lots of leftovers but I really don’t mind! I try not to waste food and eating leftovers can make life a little bit easier when your busy! I can’t wait to check out all of your eats this week!

Happy Wednesday! I’m sure many of you are off today and home getting ready for Thanksgiving tomorrow with your friends and family! I have the day off from work today and am so excited to be home, relax, and enjoy some down time.  I also plan to get in a challenging workout at the gym today.  I always feel a little better about indulging when my muscles are sore from a great workout!  Tomorrow Michael and I will be running the Marathon Sports Gobble Gobble Gobble Road Race in Sommerville, MA before heading to his family’s house for dinner.  Friday we head to Upstate NY to spend time with my family.  I’m really looking forward to it all!  Are you running a holiday road race? What are your holiday plans?

Now on to my eats…

For breakfast I’ve been obsessed with eggs and toast.  I like my eggs fried, scrambled, poached, and really just about any way.  I had a craving for English Muffins over the weekend so we picked some whole wheat ones up at Whole Foods.  Delish!

A side note here: I told you all a few weeks ago I was going to give up caffeine because it was giving me headaches.  Let me tell you.  Best decision ever.  I feel so much better! I’m much more energetic in the morning and have a much easier time waking up. I have noticed I don’t get afternoon headaches and the tiredness in the afternoon I was experiencing has also diminished.  I’m sure some of that is just that I’ve been feeling good lately but I do think the caffeine has really helped!

Sunday evening Michael’s sister invited us over for dinner.  She made a pot of her Mom’s homemade spaghetti sauce, and a big pot of Ziti.  She was kind enough to make extras so that we could all bring some home!  I took a container and brought it to lunch for work this week.  It worked out perfectly since I decided to skip grocery shopping to use up some of the food in my fridge and not let anything go to waste.

Over the weekend Michael and I got the urge to cook! And boy, did we cook up a storm.  We decided to make Indian food.  We made a lamb stew with spinach, chicken Tikka, homemade Raita, and Basmati Rice! It took some time but it was delicious!  My favorite part of cooking this was when Michael looked at me and said, “This better be your What I Ate Wednesday!”

For dessert we made some homemade mini pumpkin whoopie pies.  Michael found this recipe online at Gilt Taste.  They looked delicious and we love whoopie pies so we went ahead and gave them a try.  They use some interesting ingredients and let me tell you…they are all worth it!

What I Ate Wednesday! First Wednesday of November!

Happy Wednesday! Can you believe it is November already?! Where does time go? It’s almost time to start Christmas shopping and getting ready for the holidays.  On the upside, it is Wednesday so this week is on a downhill slope! I’m working a half day on Friday and then Michael and I are heading to New York to visit my parents.  I love when we go visit, my mom always makes delicious food and it is very relaxing! I think next week’s What I Ate Wednesday will be highlights of her cooking! This week’s post focuses on using up leftovers to make a whole new kind of meal and recreating a favorite breakfast at home!

I love Trident Booksellers and Cafe on Newbury Street in the Back Bay of Boston.  They make a really great breakfast that is available late into the day and offers fresh ingredients and a twist on breakfast.  They also have a ton of smoothies,veggie drinks, tea and coffee.  All of which are delicious.  One of my favorite items on the menu is the Potato Chuckwagon.  It’s a bowl of shredded potatoes, sautéed with your choice of veggies, meat and cheddar cheese.  It’s topped with two eggs any style but I always go for over easy and toast on the side.  It’s delicious!

Michael and I went to Trident Saturday morning and I ordered this.  We decided to give it a try at home with our own twist.  We used sweet potatoes, onions, and peppers, and cheddar cheese with just a dash of salt and pepper.  Fried eggs on top and oatmeal toast on the side!

It wasn’t as good as Trident’s but was delicious and a nice change in pace from our usual breakfast foods!

Lunch has been boring, I’ve been sticking to a Turkey Sandwich on whole wheat bread with Roasted Red Pepper humus, lettuce, tomato, and slice of cheddar cheese.  On the side I have pretzels, an apple and a pumpkin granola bar!

Brown Bag Lunch!

It’s not fancy but it always tastes delicious and fits in with my need to brown bag lunch!

Michael and I made quesadillas with Mexican rice, refried beans and homemade guacamole for dinner.  We used a roasted chicken to provide us the meat for the quesadillas.  This is a great idea because these are usually pretty reasonably priced and save time!  We had lots of leftover chicken, rice and beans.  I used these ingredients to make a quick and easy dinner and not let the left overs go to waste!

Mexican Leftovers!

I sliced up some of the left over chicken and paired it with some salsa, melted some cheese on top of the leftover rice and beans and then cooked up some broccoli for a vegetable.  It tasted delicious and was just different enough from the quesadilla dinner that I didn’t get bored.  The best part of this?  Nothing went to waste!

Also this week I have been drinking Kombucha! Thanks to the blog world I discovered this product and really like it.  It makes me feel really good the next day!

I really like the Trilogy flavor.  It has raspberry and lemon added to it! I’m so addicted to this stuff!
