What I Ate Wednesday! My Weekday Favorites!

Happy Wednesday Everyone! Let the What I Ate Wednesday Party begin! This week I am loving some healthy eats.  I found some great toppings and flavorings for my oats, am loving some pumpkin flavored Clif Bars, and am showing off my favorite go to meal. So without further ado…

For breakfast I have been loving over night oats made with skim milk, greek yogurt, cinnamon, blueberries, and a dollop of strawberry jam on top!

I didn’t take a picture but I also eat a banana every morning.

For lunch I am really  loving veggie sandwiches with humus on a pita. With so many veggies out there you can easily change it up and keep it fresh and fun.  This week I used sprouts, lettuce, cucumbers, red peppers, and avocado.

On the side I’ve been eating pretzels, an apple we picked at the orchard and greek yogurt.  For a late day snack I am LOVING the Spiced Pumpkin Pie Clif Bars! They really do taste like pumpkin pie.

For dinner this week we had one of my favorite meals.  Michael and I make this a lot.  We are lucky living in Boston because we have lots of access to fresh fish so this meal is an easy choice.  To mix it up we choose different sides and vegetables in season.  We usually use haddock or cod with parsley, and Ritz crackers on top.

Also this week I’ve been really enjoying homemade apple bread.  It’s nice and moist and just a hint of sweetness!

What I Ate Wednesday! Meals from a Saturday Rest Day!

I love What I Ate Wednesdays! They are so fun and I really enjoy taking pictures of food from a whole day and find that it makes me think more about what I eat.  I want it to taste good, be healthy and look good too! Michael and I had plans for a down weekend.  Just quality time together, good food and lot’s of rest.  Did you see yesterday’s post about enjoying a rest day?  So here is what we ate!

Friday…

I want to a farmers market at lunch and got lots of delicious vegetables! Michael went to Bob’s Italian Food Imports and got us some Italian Marinated Steak Tips, fresh rolls and some fresh cheese! We made steak sandwiches with fresh corn and potato chips from the fresh potatoes at the farmers market.  It was so delicious!

Saturday morning we made pumpkin pancakes with fresh peaches from the farmer’s market! We used Trader Joe’s Pumpkin Pancake and Waffle Mix which is delicious and has the recipes right on the back…

We were out and about Saturday…see my post about enjoying a rest day…and stopped at this little hole in the wall pizza place…

The pizza…particularly the Sicilian was out of this world but I got one of each style to try both!

We went apple picking, and stopped at my favorite farm, Wilson Farm to get groceries for dinner.  We made a Lamb Ragout with Polenta! We used the fresh vegetables from the farmer’s market and fresh lamb.  It was good and filled with fresh fall flavors and kept us warm on a cool fall night!

I also made a fresh homemade apple pie with some of the apples we picked! It came out wonderful and was the perfect ending to a weekend filled with good foods!

How to Enjoy a Rest Day!

As many of you know I have been rather caught up in training for Chicago Marathon.  It is all I talk about.  So with that in mind, Michael and I found ourselves with a weekend all our own.  No plans except for a 20 mile long run.  We agreed to do it Sunday morning and have rest day on Saturday. A weekend day together sans marathon (well almost)!

So what did we want to do on our day?! Slept in, ate breakfast and relaxed! This was pure heaven when your used to waking up at 5:30AM for long runs.  After relaxing and getting ready for the day we checked out Marathon Sports Annual Fall Sidewalk Sale since Michael needed to get his Marathon Day Top.  He scored a great Saucony singlet and a pair of Brooks Defyance 2′s for about $40.  Great Deal.  By then we were hungry!

After that little slice of heaven we were off to pick apples.  Michael had some requirements for this.  It needed to be a no fuss place, no farms animals, hayrides or kid’s events.  Just good plain apple picking! We went to Doe Orchards in Harvard, MA.

It was a great afternoon! The sun was shining, it was nice and cool out and orchard was beautiful.  The trees were overflowing with apples.

After we picked our big bag of apples we went on our way to my favorite farm, Wilson Farm!

They have tons of fresh foods inside the store, the vegetables all look amazing.  The bakery is chock full of breads and pies I’d love to devour.  My favorite part? The apple cider donuts and caramel apples they make right in front of you!

After our day of fall adventures we took our groceries home and made a delicious dinner of Lamb Ragout with Polenta. We spent the evening on the couch in our sweats, watching movies and Mad Men Episodes and resting up for our 5:30AM wake up call and 20 mile run.

I have to say, it was really nice to spend a day away from Marathon Training and focusing on the other things life offers us and living in the present.  This was a goal of mine for September, to live life and be happy, after this weekend I think I succeed in accomplishing my goal.  Michael and I felt completely refreshed on Sunday during our run and really tackled it with a renewed enthusiasm.

So here is my question for you, how do you enjoy your rest days? How do you know when you need to take yourself out of training for a day or a week to refresh yourself and focus on the other things in your life? As runners training can be all-consuming but taking a break can be really beneficial.  How do you stayed motivated and enthusiastic about training?
