Happy Wednesday Friends! I love a good foodie day, mostly because I love food. Today we have some new foods and the return of some favorites. It’s always interesting to me how the weather can impact my food choices. This week I’m loving things like oatmeal, and soups but also fresh blueberries and raspberries since they remind me of warm summer days.
Breakfast.
With the freezing cold temperatures of the last week I returned to oatmeal. Last winter I was obsessed with oatmeal and ate it almost every morning. This winter I haven’t been eating it so much but the cold weather definitely had me craving it! I had banana bread oatmeal with raisins, peanut butter and a little bit of skim milk on top. On the side a piece of toast with raspberry jam and a cup of coffee.
Lunch.
The cold weather still has me loving leftovers heated up for lunch. Left over gnocchi with a side salad makes for a perfect lunch. Fresh blueberries and raspberries have been my mid-morning snack. I’m loving it because they remind me of the warm summer days ahead. Oranges have been in my lunches too, I’m loving the freshness of them and the extra kick of vitamin C. I’ve been doing a good job of sticking with my granola bar in the afternoon and skipping the sweets at work!
Dinner.
Lazy Sundays are awesome for a lot of reasons but one of the best reasons is that they usually inspire Michael to get in the kitchen and cooking. Sunday was no exception and he was itching to make homemade soup. With the two of fighting the sniffles and headaches for the last few days it was just what we needed. Michael made homemade Pho with noodles and pork tenderloin. It tasted as good as it looks!
It had a ton of ginger in it and we both commented on how our bodies really needed the soup. On the side he made homemade dumplings with Napa cabbage and pork in it. They were incredibly delicious and something we’ll definitely be making again!
To be honest, I wasn’t too excited by the sound of all this food but when it came time for dinner I was so happy!

Michael made it and used like 3 different recipes and combined them all! It was pretty easy and really good!
Your dinner looks delicious! My eating is definitely impacted by the weather. I made stuffed peppers this week in response to winter.
I LOVE stuffed peppers…one of my favorites on a cold winter day!
