What I Ate Wednesday! Fall Foods!

It’s hard to believe it’s Wednesday already! Weeks with Monday as a holiday always seem to fly by.  Monday we spent the afternoon baking homemade apple muffins, and curling up on the couch with a hot cup of tea.  I’m not sure what it is about the fall but I really love the relaxed pace and quiet time at home.  I’m loving the warm comfort foods that are filling our plates, fridge and lunch bags.

Breakfast. 

I’ve really been loving breakfast lately, it’s been worth it to get up a little earlier to drink my coffee and enjoy some quiet time before the day begins.  Homemade apple muffins have been gracing my plate and they are just oh so delicious!  I’m also loving Trader Joe’s Pumpkin Granola.  It’s the perfect fall breakfast.

Lunch. 

I love that our fridge is filled with all sorts of delicious leftovers for good lunches.  In fact the other day I was just thinking about how different my lunches have been.  This week we have grilled chicken for sandwiches and homemade turkey chili.

Homemade Turkey Chili

I’ve had my usual snacks on the sides.  Bananas, apples and grapes for fruit.  Chobani Yogurt or a granola bar for a snack.

Dinner. 

I love thai food.  My newest obsession has been spicy pumpkin basil curry with chicken.  It has pumpkin, peppers, chicken, potatoes and all sorts of goodness in it.  On the side I made some of Trader Joe’s Chicken Gyoza Potstickers.

Dessert.

I love chocolate.  So does Michael. We always have chocolates in our freezer and they are the perfect way to satisfy my sweet tooth!
