Another Wednesday is upon us! I have another week of eats to share with you all! I’d love to tell you that I’ve been switching things up and have a lot of variety to include this week but I don’t. Instead I’ve been sticking with what works but trying to include new and fun ingredients. Don’t fix what’s not broken right?
Breakfast.
I’ve been loving smoothies as I have in weeks past but this week is all about the green smoothie!! In to the mix has been spinach, avocado, banana, frozen fruits like apples, grapes, peaches and strawberries with some milk and apple juice. On days when I had yoga teacher training I added some coconut protein powder for some extra staying power! Delicious. With these cool mornings coffee has been on my mind and I can’t get enough. Delicious! Mike’s Mom made some homemade banana bread for us, I have no self-control and can’t help myself from digging into a piece or two each morning. It tastes so good with my coffee!
I’ve been loving waffles with peanut butter and banana on them before my long runs. Back in the spring when I was training for Boston peanut butter and I weren’t getting along so well but lately it’s the perfect long run fuel! It’s also my go-to when I’m running late in the morning and need to get out the door. Quick, easy and delicious!
Lunch.
Salads have been the name of the game lately. We’ve been buying big bags of mesclun mix when we grocery shop. I’ve been adding cucumber, tomato, avocado and either tuna or chicken with feta cheese. With some light oil and vinegar on top these salads have been filling and delicious. Goldfish and pitas have been accompanying my salads. A girl needs some carbs! Fruit on the side has been grapes, we go back and forth between green and red. Some days I’ve been having Chobani Greek Yogurt and others I’ve been reaching for the chocolatey granola bar instead.
Dinner.
Last Wednesday Michael and I had some exciting news to celebrate (yes I know, you are wondering what all this news is…I’ll tell you soon I promise!). We love to celebrate with food so we made shrimp scampi and served it over angel hair pasta. I don’t know why but seafood, butter, oil and lemon tastes divine. Seriously, this always tastes good! Garlic bread and salad (not pictured, sorry!) to go with it. I’m quite sure I said, “this is so good!” about 10 times throughout our meal.
Dessert.
I may or may not have continued the celebrating with Brigham’s Mocha Chip ice cream. This “celebrating” continued for days until the entire container was empty. This ice cream is so good, I can’t resist! I went all out with Hershey’s Dark Chocolate Syrup (yes, it’s the only acceptable kind in our house now!), whipped cream and chocolate sprinkles. Not so healthy but sometimes it’s worth celebrating…for days.

Agree with Heather on this one – does wine count as a celebratory snack because that is my go-to when it’s time to celebrate…orrrr to unwind after a craptastic day. That works too
