Happy Wednesday! I’m psyched to be half way through the week. We are heading to NY this weekend to visit my family and hang out at my summer-house. It’s been a hot one this week so I’m looking forward to swimming and being by the water!
The theme of this month’s What I Ate Wednesday is Food, Fun & Fitness! This week’s fitness includes my two favorites, yoga and running (this is nothing new!). To beat the heat and enjoy my workout’s I’ve been getting up at 5am to squeeze in a 4 mile run. After my run I’ve been using a 12lb. medicine ball to work my abs and core and 10lb. weights to tone up my biceps, triceps and shoulders. I always finish my workout with 25 push ups and some stretching. In all the workout takes me a little over an hour. The nice part is that you are done for the day and don’t have to worry about pop-up thunderstorms or the heat ruining your evening workout! Tuesday I tried a new yoga class at a studio near by. The nice part was that the class was only an hour so I still got in a workout but was home a little earlier than normal. Shall we get to the good stuff, food?!
Breakfast.
I’ve still been enjoying Special K cereal with skim milk and fresh raspberries and strawberries on top. It’s quick and easy in the morning and tastes delicious! I love the fresh berries found in the summer.
I also have my coffee with skim milk and Truiva on my way to work and a banana around 10am. If I’m feeling hungrier than normal at 10am I put some peanut butter on my banana, it keeps me satisfied a little longer. If I’m running late and not able to eat breakfast at home I pack one of the Breakstone 100 calorie Cottage Cheese doubles and berries to eat at the office. I like a back up option so I’m not tempted to stop for a bagel on my drive!
Lunch.
I’m clearly a creature of habit when it comes to lunch. Nothing new or exciting today. A 100 calorie sandwich thin with turkey, american cheese, spinach and some honey mustard. We changed up the “crunch factor” this week and got Wheat Thins. A peach and Chobani Greek Yogurt are eaten throughout the afternoon as a snack.
Predictable but still good!
Dinner.
One of the biggest things I’ve learned since counting calories is that I tend to over do it at dinner, sometimes eating upwards of 1000 calories. I’m trying to cutback and exercise some portion control which is not always easy since I love food! We are cutting back on carbohydrates so we only eat them once or twice a week with dinner. Here’s a look at a couple of dinners from last week…
Sunday we were feeling a little indulgent and had some left over turkey taco meat. Michael suggested a “Ghetto” version of Hamburger Helper. We made homemade stove top mac and cheese and added the meat. To make the mac and cheese a little leaner we used skim milk and reduced fat cheese and no butter. Instead of bread crumbs we sprinkled some crumbled Ritz Crackers on top. A big salad with yogurt dressing, veggies and croutons on the side. A meal like this is best enjoyed in front of the TV with a good movie on!
Monday’s dinner was much more healthy than Sunday. We had fresh haddock on the grill with just a little olive oil, lemon and pepper. The sides were steamed broccoli and salad with yogurt dressing, veggies and croutons again.
The meal was really light and flavorful, perfect for a hot summer night!
Dessert.
Mike and I both have pretty ridiculous sweet tooth’s. To go without anything would be torture for us and since we strongly believe in living life, we’ve been enjoying our sweets thanks to Skinny Cow. These are my favorite lately…

It was cooked on the grill in foil with just olive oil, lemon juice and pepper! It was quick, easy and delicious!
Love skinny cow!! Totally helps for a Sweet treat. Also, try this: freeze a banana or two, then put it in a food processor w a little peanut butter and chocolate chips. Mix r up and you got ‘mock’ banana ice cream for about 150 cals! So good!
OMG! I NEED to try that! It sounds so good and we have about a gazillion frozen bananas in the freezer! I suspect you’ll see that next week
Your salads look wonderful! And same with the skinny cow. I love their sandwiches. Haven’t tried this one yet. its on my radar.
I have to give it to my boyfriend for the delicious salads! He hates a boring salad. I like this much more than the sandwiches!
The cookies and cream bars look soo good! I used to eat their Dulce De Leche ones – soooo tasty!
They are so good! I am certainly going to be trying the other flavors!
I use to love Skinny Cow products until I became lactose intolerant (they’re great regardless) so I’ve gotten into Coconut and Almond Milk ice cream sandwiches and bars— so yummy! I also recently gotten into mug cakes, I’m going to post the recipe soon but they’re perfect for a sweet tooth with a healthier twist.
I LOVE mug cakes but the recipe I have is not very healthy at all. I def want to check out this recipe!
