Happy Wednesday! So far this first week back after vacation has been cruising on by. I’ve been focusing on eating healthy and working out! Establishing a new routine and healthy eating habits now that vacation is over and we are settled is really important to Michael and I but more on that another day.
I’m happy to be part of What I Ate Wednesday this week! I missed it last week. Today I thought I’d share some of the healthy breakfasts and lunches I’ve been eating this week and then a look at my favorite dinner from vacation. My hope is that it gives you a look at what I eat when I’m trying to be healthy and what I eat when I am indulging.

Breakfast.
It’s berry season and I just cannot get enough. I stocked our fridge with raspberries and strawberries this week. For breakfast I’ve been having a cup of Special K with skim milk and a couple sliced strawberries and a handful of raspberries. I always start my day with a glass of water too.
On my commute to work I drink my coffee with skim milk and 1/2 a teaspoon of Truvia.
Lunch.
Since I did indulge while on vacation I am trying to cut back a little this week. For lunch I’ve packed sandwiches made on 100 calorie thins, with turkey, american cheese, lettuce and mustard. On the side a serving of blue corn tortilla chips.
I’ve packed a banana for my mid-morning snack but have only eaten it a few days when I am truly hungry. I’ve also had a peach for an afternoon snack around 3pm. I have also brought a Chobani yogurt but have yet to be hungry enough to need it as a snack.
Dinner.
Our final night in Maine we enjoyed some fresh caught lobster. Since we had already had steamed lobster we decided to make a lobster pie. Lobster pie is basically boiled lobster meat chopped up and covered with a sauce made with butter, white wine, garlic and lemon juice. On top went some crushed Ritz crackers, then you bake it for about 25 minutes until golden. It smells delicious and tastes so good! We had rice pilaf with steamed corn on the side. Before dinner we had opened a bottle of wine and enjoyed a cheese and cracker plate. I love enjoying wine and cheese while preparing a nice meal!
The view with dinner wasn’t so bad either!
