Hey Guys! Happy Wednesday! I’m glad to be finally waking up to Wednesday, the weekend count down can officially begin! Winter is back in New England which means it’s cold and windy. March certainly came in like a lion, then turned into a lamb and appears to be leaving like a lion. With the combination of the weather, and the first week of taper I am feeling very low-key this week. Early bed times and lots of relaxing have been going on. Lots of eating has been occurring as well. I’ve been starving lately. I’m not sure what it is but the first week of tapering makes me feel lazy and hungry. Lucky for me and you, I’ve been in the mood to cook which means there has been lots of good food around! Let’s get this What I Ate Wednesday party going so I can share all these delicious foods!
I thought it would be kind of fun to mix it up today. Rather than stick to the normal breakfast, lunch and dinner layout I plan to share all of my favorite meals from last week. Variety is the spice of life and we need to change things up here a bit on Wednesdays!
Last week was so warm with high’s in the 80′s and my body was definitely craving summertime breakfast foods. I was psyched to make my first batch of overnight oats for the year and continued to make them all week! I used rolled oats, almond milk and strawberry Greek Yogurt. In the morning I topped them almond butter, granola for some crunch and fresh blackberries. It was absolutely delicious!
My other favorite breakfast food lately has been eggs with spinach and cheese! We’ve had this a few Sunday’s in a row now and I made it for dinner one night last week. We also made french toast too. I absolutely love french toast!
I really am not a fan of lunch meat. I like it on occasion on a bulky roll with lots of toppings in the summer or on a really good sub but I get bored with it for lunch and if I eat it too much the texture of it makes me want to gag. So I’m always looking for ways to spice up lunch. Michael marinated some thin sliced Chicken in lemon with salt and pepper and grilled it. I made a sandwich with Italian bread, grilled chicken, spinach, fresh mozzarella cheese and some pesto. It was honestly one of the best sandwiches I’ve had in a long time. Pirates Booty, an apple and Vienna Finger cookies on the side!
This first one technically counts as an appetizer. Michael made fresh Thai spring rolls with homemade peanut sauce for a work potluck. There was tons of veggies left over and lots of peanut sauce too. I should tell you all that I absolutely love the peanut sauce at Thai restaurants. I always order a side of it to put it on whatever I am eating. Michael jokes that I would swim in it if I could. Which honestly, is probably true. I love it! Once I found out there was ingredients and peanut sauce I knew we were going to make them this weekend. And boy am I glad we did! Michael worked on assembling them which is actually really neat to watch.
And once they were all prepared I got to work on eating them and finishing off the rest of the homemade peanut sauce.
We will definitely be making those again. They were just like what you get at the restaurants, so so good!
Another favorite meal this week was my homemade stuffed portabella mushrooms. I love this meal because you actually get a lot of veggies and would never really know it! I use sweet Italian sausage, red peppers, red onion in the stuffing. I cook it all up then mix in a whipped egg and bread crumbs to make stick all together. I then fill the mushrooms and bake at 400 for about 20 minutes. I top them with Italian blend shredded cheese about half way through cooking in the oven. They are so filling and good. Spinach on the side since I’m on a huge spinach kick right now!
I’ve never had Brigham’s Ice Cream and I was missing out! We got Mocha Chip ice cream on Saturday night and it was amazing! Quite possibly a new favorite!
