Hi Guys! I hope you are all having a fantastic Wednesday! I love hump day and love that it gets us that much closer to the weekend. I spent some time before work this morning studying for my NASM personal trainers certification. I feel like I’m really on a roll with the material and learning it pretty quickly. It’s definitely encouraging. Tonight I’m meeting another blogger and FitFluential Ambassador for dinner. I am so excited to meet Elizabeth from On Tap for Today! This is the second blogger I’m meeting in real life and can’t wait to get to know her.

And now on to this weeks eats and some veggies!
Yep, another go to favorite. Blueberry Waffles with sliced bananas and maple syrup and a glass of pineapple orange juice. Here’s the deal with breakfast in my world…I usually sleep until the last possible moment which means I’m usually rushing around to get ready and out the door on time which means unless it is the weekend I just don’t have time to get all fancy. I like my staples like oatmeal and waffles and they never let me down or get boring!
Since I spent most of last week with Strep Throat warm and soft foods were on the menu. Friday I was home sick from work and headed to the doctor. When I got home I had some chicken and vegetable soup, a whole wheat roll with pumpkin butter, a glass of orange juice (so not fun to drink with sore throat…it burns!) and a cup of Throat Coat tea!
The soup had peppers, chicken and zucchini in it…so so good!
Friday afternoon I was ready for a snack. Nothing sounded better than a cold smoothie on my sore throat! I was also craving some sweets as well so I blended together frozen strawberries, a raspberry Chobani Greek Yogurt, two scoops of Ghiradelli Hot Cocoa powder and a half a cup of Almond Milk. I blended until smooth and then enjoyed!

This is actually dinner from Monday. I made some fresh Salmon by coating it with olive oil, salt, pepper and Italian bread crumbs and then baking at 350 for about 25 minutes. I also roasted some Brussel sprouts by cutting them into quarters, tossing with salt, pepper, Trader Joe’s 21 Seasoning Salute and olive oil. I roast at 350 for 25 minutes, tossing about every 10 minutes. On the side I had some mashed sweet potatoes!
I love salmon! It is quiet possibly my favorite fish!
