What I Ate Wednesday! Trying some new foods!

Happy What I Ate Wednesday Everyone! This week I took to trying some of your favorite go to foods.  I also managed to eat a lot of homemade Mexican food.   I’m not complaining though! Mexican food is a great way to incorporate fresh vegetables, and protein into one meal! I did not manage to take all my pictures on one day, so it’s more of a sampling over the last week. Next week, I promise, I will do one whole day of photos. Breakfast, Lunch and Dinner.  Adding it to my to-do list now! 

I started off my new food and drink sampling this week by trying Kombucha!

I was a little hesitant about this.  I opened it and it fizzed everywhere.  Weird.  And then I smelled it. Vinegary. Gross. Finally I took my first sip.  It was not bad!  The flavor was actually quite good and I ended up liking the fizz it had.  Drinking a whole bottle was a bit much.  I think next time I’d have it in two servings, maybe morning and then again in the afternoon.  I’d definitely have it again!

I also bought the ingredients to make overnight oats for breakfast.  I was actually quite excited to make these.  They were delicious and I’ll definitely make them again.  The endless topping options have me feeling so creative!

For my first time around I kept it simple.   I combined the oats, greek yogurt and skim milk with a hint of pumpkin spice. I used a 1/2 cup of each but will try 1/3 cup next time as this seemed like a lot of oats! I topped it with some almond butter, pumpkin granola and flax seeds.  I’m going to try adding pumpkin puree next!

For dinner one night this week I made homemade Quesadilla’s.  I used ground chicken, onions, red peppers and an heirloom tomato and cheese in them.  I had avocado on the side and a spicy Habanero chili lime salsa!

This is actually the picture from dinner, but I had enough of the ingredients to make two quesadilla’s.  I brought the left over one and the other half of avocado to work for lunch! The dinner picture is pretty than anything I could take in my office.

And for dinner this week I made homemade taco’s with Michael.  We had this on Friday and wanted to make something good, healthy and easy since we were tired from tapering for the marathon and had a busy week.  Laying on the couch was more enticing than making an involved dinner.  I got the blue corn taco shells, Refried Black Beans, Spanish Rice, Avocado, Lettuce, Cheese, Fresh Salsa and a Spicy Rotisserie Chicken from Whole Foods.

We like using the Spicy Rotisserie Chicken because it eliminates a lot of prep time and the chicken itself is very flavorful so there is no need for any additional spice packets or seasoning! The result, a fresh and healthy easy dinner!

I’ve recently switched from peanut butter to almond butter.  It’s so addicting! For dessert I’ve been enjoying a little bit of vanilla ice cream with almond butter and dark chocolate chips on top! Yum!

Lastly, I have been obsessed with apple cider! I picked some up last weekend when we went apple picking and have been drinking it non-stop! I only drink it in the fall so I feel it’s OK to indulge a little!
